🍲 Brian Anthony's EZ Roasted Butternut Squash Soup & Our Featured FAN for NOVEMBER!

🍂Since we just officially rolled the 🕕clocks back for fall, and it's getting darker earlier with that crisp winter chill is in the air, I thought what BETTER recipe to post for #THROWBACKTHURSDAY then my Roasted Butternut Squash Soup Recipe circa 2014! AND I EVEN MADE A RECIPE CARD FOR YA, ta' boot!

Basically this soup recipe is so easy because you're really just rough chopping a bunch of veggies, spreading them out on a roasting tray, and roasting for 45 mins. After that, ya throw the hot roasted veggies and squash (that are nice and soft) get thrown in a blender with hot chicken stock and sourdough bread (which you can leave out if you like). What really gets easier than that?
I think the twist in the recipe is the 🍎apple. It really adds a tangy sweetness that complements the carrots🥕 and balances the salty chicken stock and savory spices.
This makes a HUGE POT🍲 of soup y'all - so you'll be able to feast (if your by yourself like me) on this for a few days, or feed a hungry family of 4 no problem-o.
