Brian Anthony Bakes A Cranberry-Banana Winter Walnut Loaf

Well, this recipe will warm your , warm your , warm your tummy, and make EVERYTHING in your home SMELL INSANELY DELICIOUS + COZY (while watching your waistline at the same time).

3 eggs, beaten

5 bananas, mashed

1/4 cup butter

1/4 cup olive oil

1/4 cup honey

3 Tbsp Maple Syrup

1 teaspoon vanilla extract

2 cups almond flour

1 cup Gluten-Free Flour (Rice)

1 teaspoon ground cinnamon

3/4 teaspoon baking powder

1 teaspoon Cinnamon

1 teaspoon Pumpkin Pie Spice

1/2 teaspoon salt

3/4 Cup Dried Cranberries

3/4 Cup of Whole Walnut halves

3/4 Gluten-Free Granola Mix

Olive oil cooking spray

Wax Baking Paper


Preheat oven to 375 degrees. Prepare a bread pan with olive oil cooking spray.

Add bananas to a bowl, mash them. Tip: I put all of my OLD BANANAS (like my grandma taught me) in the freezer and pull them out when I want to make banana bread. (*If bananas are frozen, just put them in microwave for 1 min until they de-thaw and then cut them open - throw them in a bowl and mash. By the time you have the other ingredients ready to go - they'll be fully de-thawed.)

Crack in 3 eggs and scramble with the bananas. Add melted butter, olive oil, honey, maple syrup and vanilla extract and stir until blended.

Add all dry ingredients: flours, cinnamon, baking powder, pumpkin pie spice and salt together in a large bowl; stir into banana mixture until well blended. Add in the cranberries and walnuts and mix well. Pour batter into prepared bread pan.


Spray the ENTIRE INSIDE of the loaf pan with Olive Oil Cooking Spray and then lay in WAX PAPER so it fits the LENGTH and HEIGHT of the pan. Only the two ENDS of the pan will not be covered and some of the wax paper will be sticking OUT OF THE TOP. It's SUPPOSED to be that way. Those will be your handles when trying to release the loaf from the pan! VOILA - virtually no stress and NO FLOUR BUTTER on the SIDES of the pan MESS! #YUUUUUHHSZZ

Bake in the preheated oven about 1 hour. Then, turn the oven down to 300 degrees. Spin the pan around for even baking. Then, bake for 30 more minutes (or until a knife inserted into the center comes out clean). (You need to keep checking not to burn - or depending on the oven...making sure the center is well cooked). Cool in the pan for 4-5 minutes before removing to cool completely on a wire rack.
